No matter if you’re planning a date night, girls’ afternoon, or family outing, a picnic is always a good idea. It’s a great way to go out to lunch or dinner without spending all of your food budget at once. A last minute picnic doesn’t require a lot of planning or equipment, and the best part is you can fit all of your friends in the same place.

Our Best Picnic Hacks

1. Push the bottom of a large chip bag upwards inside itself to turn it into the perfect snack bowl.

2. Prevent a soggy blanket by placing a shower curtain under your picnic blanket.

3. Tie up your sandwiches with some newspaper to ensure the filling stays in.

4. Put cupcake wrappers over your drinks to keep bugs away.

5. Store salads in mason jars instead of plastic containers to keep everything fresh. Put the dressing at the bottom to prevent a soggy salad.

Snack Ideas for Your Picnic Basket

Pizza-rolls with Pesto, Feta Cheese, and Sun-dried Tomatoes

What you need

1 pre-made pizza dough

1 cup green pesto

1.5 oz fresh spinach

7 oz feta cheese

1/2 cup sun-dried tomatoes

HOW WE DO IT

Preheat the oven to 350°F. Roll out the pizza dough on a sheet of parchment paper. Spread pesto all over the dough and add spinach, feta cheese and shredded sun-dried tomatoes. Roll up the dough and cut it into 10-12 pieces. Place the pizza buns in cupcake wrappers (place the side that was cut upright) and bake in the over for approximately 10 minutes.

 

Wrap with Hummus and Halloumi Cheese

What you need

2 romaine lettuce

2 carrots, 1 bunch of radishes + 4 green onions

2 tbs olive oil + 2 tsp

2 tbs lemon juice

1/2 tsp salt + 1/2 black pepper

14 oz halloumi cheese

1 container of hummus

4 large tortillas

How we do it

Shred the salad, carrots, green onions, and radishes, and place all of it in a bowl. Mix olive oil, lemon juice, salt and pepper in a small bowl. Pour it over the salad and mix it up. Fry the halloumi in a pan until both sides are golden brown. Place a tortilla flat and spread hummus all across the bread. Add the salad mix and the halloumi cheese. Roll your wraps up like burritos and place them in tin foil.

 

Mason jar salad with spinach, strawberries and goat cheese

what you need

Boiled farro

2 yellow bell peppers

17.5 oz fresh strawberries

17.5 oz edamame beans

4.5 oz fresh spinach

7 oz goat cheese

3.5 oz pumpkin seeds

4 tbs olive oil + 1.5 tbs white wine vinegar

2 tbs liquid honey

Salt + pepper

How we do it

Boil the farro according to the instructions. Cut up the bell peppers and cut the strawberries in half. Grab four mason jars and place the farro in the bottom. Add the edamame beans, bell peppers, spinach, goat cheese and pumpkin seeds. Attach the lid and store in fridge or cooler. Mix olive oil, white wine vinegar, honey, salt, and pepper in a separate leak-proof jar with a lid. Once at your picnic, pour some dressing over your salad and shake it to mix it up with the dressing.

 

Watermelon & Feta cheese salad

What you need

2 red onions

2 tbs sugar

2 1/2 tbs red wine vinegar

1/2 watermelon

10.5 oz feta cheese

1 can of pitted olives

3 oz arugula salad

Olive oil

Sea salt flakes

how we do it

Slice the onion in thin slices and let it soak in sugar and vinegar for 10 minutes. Cut the watermelon and feta cheese in cubes. Mix watermelon, feta cheese, olives, and arugula with the onion and vinegar mix. Add some salt and pepper and drizzle over some olive oil.
